There is an option within Rockband 2 to calibrate the video and audio so lag is not a factor. It should be under the menu options.

Calibration settings are "source" specific. In effect you calibrate for the source's characteristics.
Go get a calibration disc like Video Essentials or the free THX Optimizer available in many DVD movies.
