I've hear that plasma tvs are better for viewing sd cable. Is that true or should I be looking or an LCD?

Neither technology is better purely based on the technology itself. Its actually the nature of the image processor in the TV. So the brand, and how high up the ladder you climb within a brand, will make a bigger impact. Like a Sony XBR, a Panasonic G or V series, a Samsung 7 or 8 series, etc., I would expect stronger SD performance over say Sony EX, Panasonic U, or Samsung 4 or 5.
An LED LCD vs a Plasma is going to be a very comparable image in today's day and age. The LED LCD will tend to appear a bit crisper (artificial perception because of brightness) and the Plasma will tend to play back fast motion better (because its response time is near instantaneous like a CRT). So they do have slight advantages and disadvantages over one another, but on the whole, deliver quite comparable image quality. So again, its a matter of going with a better quality brand and a better quality model from within that brand.

What is the best TV to go with a PS3 to watch Blu-Ray movies?

I'm looking for a TV that has flawless sound, picture and yadda yadda yadda to go with my PS3. Which TV should I get where Blu-Ray movies looks best?

I would go with a Samsung or Sony. You definitely want to get a 1080p model (obviously) which isn't a problem if you're looking for a 40" or larger anyway. Stick with an LCD for gaming (unless you have the money for an LED).
Also I would strongly recommend getting a 120hz model, basically anything in Samsung that is Series 6 or higher numerically will be great. In Sony's case, anything V-Series or lower alphabetically (W, XBR, Z etc.) will also be great.
If you have mostly Sony products to work with, stick with Sony, but remember that Samsung's generally have a higher contrast ratio and lower price for models comparable to Sony. Good luck though!
(To "jack": No Panasonic does not have the best picture, I sell televisions and I get look at ALL different brands ALL day long, so i have no idea where you are getting this notion from. Samsung's easily have the best picture.)
